Apricot Jam
Quick and easy freezer jam

Ingredients
- 4 c thrive freeze dried apricots
- 4 c very warm water
- 1 1⁄2 c thrive sugar
- 1 59⁄100 oz ball instant fruit pectin
Instructions
In a large mixing bowl, add apricots and very warm water, with ½ cup of the sugar.
Let sit for 30 minutes to absorb water. Crush the apricots with a slotted spoon, fork,
or masher.
In a separate non-reactive bowl (glass is a good choice), add the remaining cup of
sugar and the package of Ball Instant Fruit Pectin. Stir to mix the pectin and sugar
together.
Add the mashed apricots to the sugar and pectin in the glass bowl.
Stir 3 minutes
Ladle into clean jars or containers and let stand for 30 minutes.
Refrigerate or put in freezer.
This is a low sugar recipe and the pectin worked great. This recipe would work for
all of our freeze-dried fruits except the peaches.
