Beef Enchilada Bake
You can make this tasty casserole with ground beef or our Beef TVP. Add extra vegetables to give more texture, color, and flavor

Ingredients
- 1 c boiling water
- 1 cn (10 3/4 oz) condensed tomato soup
- 1 c salsa
- 1 c thrive freeze dried sweet corn (rehydrated)
- 6 corn tortillas, cut into 1-inch squares
- toppings such as sour cream, olives, etc. (optional)
- 1 c thrive beef tvp, rehydrated
- 1 c thrive fd shredded cheddar cheese, rehydrated
Instructions
*Preheat oven to 350 degrees F.
*In a large bowl, cover freeze dried ground beef or TVP with warm water. Let sit for 5-10 minutes until softened and rehydrated. Drain. Repeat the same process for corn and cheese, if necessary.
*In a large skillet, combine ground beef, tomato soup, salsa, corn, and tortillas; heat through. Transfer to a 2 1/2 quart baking dish and top with cheese.
*Bake for 15 minutes or until cheese is bubbly. Top each serving with olives and a dollop of sour cream, if desired.

Beef Enchilada bake
We love this. We do change one thing. We have found that TVP works better if we soak it in a sauce rather than water. For this recipe, we soak the TVP in enchilada sauce. We do the same when we use the TVP for tacos.
This really is a great recipe. even our extrememly picky child loves this. Our kids have NO clue that they are eatting TVP .
