Cauliflower & Cheese Soup
This great crock pot soup includes a variety of vegetables that combine deliciously.

Ingredients
- 2 c thrive freeze dried cauliflower
- 1⁄4 c thrive freeze dried chopped onions
- 1⁄4 c thrive carrot dices
- 1⁄4 c thrive freeze dried celery
- 4 c chicken broth
- 1⁄2 t worcestershire sauce
- salt and pepper to taste
- 2 c heavy cream
- 1 c thrive fd cheddar cheese, rehydrated
- chopped chives, garnish
Instructions
*In a small bowl, cover THRIVE freeze dried cheese with warm water. Let sit 5-10 minutes until softened and reconstituted. Drain.
*Combine cauliflower, onion, carrot, celery, and chicken broth in a slow cooker. Cover and cook on high heat for 45 minutes to 1 hour. Alternately, you may simmer the ingredients on the stove until all of the vegetables are soft and cooked through.
*Transfer soup to a blender and puree or alternately, use an immersion (stick) blender.
*Return mixture to stove top or slow cooker and blend in cream, Worcestershire sauce, cheese, and desired salt and pepper.
*Ladle soup into bowls and serve. Garnish with cheese and chives if desired.

Dee-lish!!
We loved this soup! It's rich and creamy and full of flavor. And it's so easy! We didn't use the slow cooker - we just simmered the ingredients for about 20 minutes before putting it in the blender... perfection!
