Cheesy Parmesan & Spinach Manicotti

Ingredients
- 1 pk manicotti noodles, cooked according to package directions
- 1 ct (15 oz) ricotta cheese
- 2 c shredded mozzarella cheese, divided
- 1⁄4 c shredded parmesan cheese
- 1⁄2 c thrive freeze dried chopped spinach
- 1⁄2 t thrive iodized salt
- 1⁄4 t dried oregano
- 1⁄8 t garlic powder
- favorite jarred or homemade spaghetti sauce
- parsley (optional)
Instructions
* Preheat oven to 350 degrees.
* To rehydrate THRIVE Spinach, combine 1/2 c dried flakes with 1 c hot water. Let stand 15 minutes, then drain well.
* Place cooked manicotti noodles on a cookie sheet lined with wax paper. Set aside until noodles are cool enough to handle.
* Meanwhile, in a medium-sized bowl, combine spinach, spices, and 1 c mozzarella cheese.
* Spread 2-3 tbsp of spaghetti sauce in the bottom of a greased 9"x13" baking dish.
* Spoon cheese mixture into cooled manicotti noodles. Place filled noodles side by side in baking dish and cover with remaining mozzarella cheese and as much additional sauce as desired.
* Bake for 15 minutes until hot and bubbly. Garnish with snipped parsley.
