Cornbread Breakfast Casserole
Can you imagine a better way to start the day? This casserole includes cheese, cornbread, and veggies you'll love.

Ingredients
- 1 c thrive sausage tvp
- 3⁄4 c boiling water
- 3 T butter
- 1⁄2 c thrive red & green bell peppers
- 1⁄4 c thrive freeze dried chopped onions
- 8 thrive whole eggs, prepared
- 1⁄3 c prepared thrive powdered milk
- salt & pepper to taste
- 1 c shredded cheese
- 1 large or 2 small boxes favorite corn bread mix (or our classic cornbread recipe)
Instructions
* Prepare Sausage TVP by combining 1 c TVP with 3/4 c boiling water in a microwave safe dish. Microwave on high for 2 minutes. Remove and let stand for several minutes. Drain off any excess water, if any, before using in this recipe.
* Meanwhile, saute onions and peppers in butter until tender; set aside.
* Beat eggs, milk, salt, and pepper, then add to a greased skillet and scramble slightly over medium heat.
* Prepare your favorite corn bread mix according to the package directions, or use the Classic Cornbread recipe in our database.
* Spread 1/2 of the corn bread batter in the bottom of a well-greased 9"x13" pan.
* Top batter crust with sausage TVP, followed by the vegetables, followed by the partially scrambled eggs. Sprinkle with cheese and top with remaining corn bread mixture.
* Bake at 350 degrees for 30-40 minutes or until inserted toothpick comes out clean.

Instead of cornbread we used the 6 grain pancake mixture & only used it for the topping (instead of both bottom & topping).
LOVED IT!
