Layered Sweert Potato and Cranberry Casserole
Crunchy topping over Sweet Potatoes with a hint of tartness from cranberries

Ingredients
- 3 c fd sweet potatoes
- 1⁄2 c packed brown sugar
- 2 T melted butter
- 1⁄2 c orange juice
Instructions
1 pantry can equal 3 cups sweet potatoes
cook sweet potatoes i n 5 cups water for 15 minutes, drain
Arrange half of sweet potatoes in buttered casserole and sprinkle with 1/4 cup brown sugar. Dot with butter and sprinkle 1/2 cup cranberries over top. Cover with remaining sweet potatoes, brown sugar and cranberries. Pour orange juice over all. Cover and bake at 350 degrees for 45 minutes. Uncover, distribute walnut topping over top and bake 10 minutes longer
Walnut Topping:
Mix together
1/2 c. chopped walnuts
2 tbsp. melted butter
1 tbsp. brown sugar
1/2 tsp. cinnamon
Notes
This was a hit with my family for this years Thanksgiving. Generally not sweet potato eaters, but really enjoyed the contrast. It was pretty also with the fresh cranberries poking through.
