Mashed Potato Casserole

- 6 servings of thrive potato pearls
- 1⁄3 c sliced green onions or chives
- 1 clv garlic, minced
- 2 T butter
- 1 ct (8 oz) sour cream
- salt and pepper to taste
- shredded cheddar cheese to taste
Instructions
* Prepare mashed potatoes by adding water and heat, according to package directions; set aside.
* In a small skillet, saute onions/chives and garlic in butter until tender.
* Add onions/chives and garlic to mashed potatoes, then stir in sour cream.
* Transfer mixture into a greased 1 1/2 quart baking dish and sprinkle with cheese. Bake uncovered in a 350 degree preheated oven for 20-30 minutes.
