Red & Green Pepper Crusted Chicken Breast (w/Rosemary Balsamic Reduction)

Ingredients
- 1 c thrive red & green bell peppers
- 1⁄2 c grated parmesan cheese
- 2 thrive whole eggs, prepared
- 1⁄2 c thrive white flour
- 2 chicken breasts
- 1 sprig rosemary (and more for garnish, if desired)
- 2 c balsamic vinegar
- 1 clv garlic, minced or pressed
- salt and pepper to taste
Instructions
*Season reconstituted eggs with salt and pepper.
*Preheat oven to 300 degrees F. Preheat frying or sauté pan.
*Combine peppers and Parmesan cheese in a small casserole dish. Gently coat chicken first in flour, then in eggs, and lastly in peppers and Parmesan mixture.
*Add olive oil to preheated pan and place breasts into pan. Reduce heat to medium, being careful not to burn the chicken breasts. After a few minutes, gently turn each breast over with a spatula. When each side is golden brown, dish breasts onto an oven safe serving plate, cover with foil, and place them in the oven. Remove any large burned bits from the pan.
*Return pan to heat, adding the balsamic vinegar, garlic, and rosemary. Season lightly with salt. Reduce for 5-7 minutes, until slightly thickened and syrupy. Serve over chicken breasts.

Awesome! With several changes to your recipe and after browning the chicken breasts for 2-4 minutes per side; we placed chicken on a oven safe serving platter,dotted chicken breasts with butter, covered as suggested with foil and cooked in a 375 degree oven for 20 minutes. It was so tender and delicious. The coating recommended was great but was way too much for 2 chicken breasts. Recommend cutting it down. Out of a 1-5 rating, my daughter and I gave the recipe a 5, while my husband said 4 because he felt the recipe was poorly written. This was our first recipe using a THRIVE product. We are very impressed with the quality and flavor of the THRIVE Red & Green Peppers! Looking forward to using them in other recipes.
