Sour Cream & Cheese Potatoes

- 4 c thrive potato chunks, dry
- 1 cn cream of chicken soup
- 1 c thrive freeze dried chopped onions, rehydrated and drained
- 2 c grated cheese, divided
- 2 T butter
- 2 c thrive sour cream powder + 1 cup water (or 2 c. sour cream)
- thrive salt and pepper to taste
Instructions
* Preheat oven to 350 degrees.
* Rehydrate potato chunks by placing them in a bowl and covering with hot water. Let stand for 5-10 minutes. Repeat process for freeze dried onions and cheese if necessary, allowing to sit for 5-10 minutes before draining.
* Spread potatoes in the bottom of a casserole dish and set aside.
* In a medium saucepan, combine soup, sour cream, onions, butter, and 1 1/2 cups of cheese. Heat the mixture over medium heat, stirring frequently, until the cheese is melted.
* Pour cheese blend over the potatoes and combine, seasoning with salt and pepper to taste. Top with remaining cheese and bake until the cheese is barely melted.
