THRIVE Homemade Cornbread
Serve your cornbread with a creamy broccoli soup for a filling, savory meal.

Ingredients
- 1 c thrive cornmeal
- 1⁄2 c thrive white flour
- 1⁄4 c thrive cheese blend (if desired)
- 4 T shortening, divided
- 1 t thrive iodized salt
- 1 c buttermilk (can be replaced by adding 1 t fresh lemon juice to 1 c thrive powdered milk or instant milk; let sit for 5 minutes)
- 1 T thrive whole eggs powder + 2 tbsp water
- 1 T thrive baking powder
- 1⁄2 t thrive baking soda
Instructions
* Preheat oven to 400 degrees. Add 1 T shortening to 8"x8" pan or dish; place dish in oven and allow shortening to melt.
* In the meantime, mix flour, cheese blend, cornmeal, and salt in a medium bowl.
* In another small bowl, mix buttermilk, milk, and egg. Stir in baking powder and baking soda.
* Add wet ingredients and stir until combined.
* Melt remaining shortening in the microwave and stir into the batter.
* Remove pan from oven; shortening should be melted. Pour batter into pan, return to oven, and bake for 20-25 minutes or until lightly golden brown.

Moist
