Make your rolls from scratch and serve them alongside a delicious dinner.
* In a large mixing bowl, mix 5 cups whole wheat flour, yeast, and dry milk.
* Add water, oil, and honey, and mix well for 1-2 minutes. Cover and let dough rest for 10 minutes, allowing the yeast to become active.
* Add remaining 2 cups of whole wheat flour, along with eggs and salt; mix.
* Add white flour, 1 cup at a time, until dough begins to pull away from the sides of the bowl. Knead for 5-6 minutes. Dough should be soft and manageable. (Stiff dough produces dry, heavy rolls, so if dough stiffens while mixing, drizzle a little warm water over as you knead it.)
* Dough may be used immediately or stored for several days in the refrigerator.
* If using immediately, lightly oil hands and counter top; shape or roll out into rolls. Cover loosely and allow to rise until very light.
* Bake rolls at 350 degrees for 18-20 minutes. Do not over bake. Recipe will yield about 5 dozen large rolls.
