This moist, fluffy cake is perfect for the holidays.
*Preheat oven to 350 degrees F.
* Mix boiling water, 1/4 c butter, and oatmeal together; set aside.
* In a separate bowl, cream together brown sugar, 1 c white sugar, and eggs. Add oatmeal mixture to creamed mixture; mix to combine.
* Add whole wheat flour, baking soda, cinnamon, nutmeg, and salt.
* Mix all ingredients well and place in a 9"x13" pan. Bake at 350 degrees for 35 minutes.
* While cake is baking, combine the rest of the ingredients (chopped nuts, coconut, remaining sugar, vanilla, remaining butter, and milk) and mix well.
* Spread the topping mixture over the baked cake. Turn oven to broil and place cake back in the oven for 2-5 minutes, allowing the top of the cake to turn a light brown.
