OATMEAL CAKE
 
INGREDIENTS:



1 cube butter

1 cup THRIVE Quick Oats

1 1/2 cups boiling water

2 eggs

1 cup THRIVE Brown Sugar

1 cup THRIVE White Sugar

1 tsp. vanilla

1 cup THRIVE Flour

1 tsp. THRIVE Salt

1 tsp. THRIVE Baking Soda

1 tsp. nutmeg

1 tsp. cinnamon



FROSTING:

6 Tbs. butter (using THRIVE Butter Powder)

1 cup THRIVE Brown Sugar

1/2  cup evaporated milk

1 cup coconut

1 tsp. vanilla

PREPARATION:

Combine butter, oatmeal, and boiling water in a bowl and set aside. Mix remaining cake (not frosting) ingredients in another large bowl. Once mixed, add the oatmeal mixture and stir. Pour into greased cake pan and bake 350 for 30 minutes. For frosting: Heat milk and sugar until dissolved. Add melted butter and stir. Add vanilla and coconut, stir together. While cake is still hot, pour frosting mixture over cake and serve warm.
