PREPARATION:
Preheat oven to 375º. Place the ham TVP into a bowl. Pour the boiling water over top of it and let it sit for about 10 minutes or until the water is absorbed. Drain any excess water. Set aside. In a mixing bowl combine the eggs and milk. Whisk until well blended. Add the cheese, chives, salt, pepper, and reconstituted ham. Stir gently until blended. Spray 2 mini muffin tins with non-stick cooking spray and fill muffin cups to almost the top with the egg mixture. Bake for 8-10 minutes. Serve warm.
