PREPARATION:
Pancakes:
Stir together pancake mix and water. Batter will be lumpy, do not over mix. Gently fold in blueberries. Pour approximately ¼ cup batter per pancake onto hot, greased griddle. Cook 1-2 minutes on each side, turning only once. Serve hot, topped with buttermilk syrup.
Syrup:
Combine all ingredients except vanilla in 3 quart saucepan. Bring to a boil over medium heat and gently boil for 5 minutes. Remove from heat and stir in vanilla. Serve over pancakes, waffles or ice cream.
