6 GRAIN PANCAKES WITH BLUEBERRIES & BUTTERMILK SYRUP
 
INGREDIENTS:



Pancakes:

2 cups THRIVE 6 Grain Pancake Mix

1½ - 2 cups water (add more or less to reach desired pouring consistency)

½  - 1 cup THRIVE Blueberries (reconstituted) Makes 12-14 pancakes. 


Syrup:

1½ c. THRIVE Sugar

¾ cup buttermilk

½ cup butter (using THRIVE Butter Powder)

2 Tbs. light corn syrup

1 tsp. THRIVE Baking Soda

2 tsp. vanilla

PREPARATION:

Pancakes:

Stir together pancake mix and water. Batter will be lumpy, do not over mix. Gently fold in blueberries. Pour approximately ¼ cup batter per pancake onto hot, greased griddle. Cook 1-2 minutes on each side, turning only once. Serve hot, topped with buttermilk syrup.



Syrup:

Combine all ingredients except vanilla in 3 quart saucepan. Bring to a boil over medium heat and gently boil for 5 minutes. Remove from heat and stir in vanilla. Serve over pancakes, waffles or ice cream.
