WHITE BEAN CHICKEN CHILI
 
INGREDIENTS:



1 lb. THRIVE Navy Beans (rinse and soak overnight or at least 6-8 hours and drain)

5 cups chicken stock

4 Tbs. butter (using THRIVE Butter Powder)

1 Tbs. minced garlic

1/2 cup THRIVE Onions

1 1/2 cups chopped green chiles (fresh or canned)

1 lb. boneless, skinless chicken breast (raw) cut into bite sized chunks

1 Tbs. ground cumin

1 Tbs. dried oregano

1 tsp. ground black pepper

1/2 tsp. ground white pepper

Pinch of red pepper flake (optional)

1/2 bunch fresh cilantro, chopped

PREPARATION:

Place rinsed, soaked and drained beans in stock pot. Add chicken stock and bring to a boil over high heat. Let boil for 30 minutes or until beans become tender. Meanwhile, melt butter in a saucepan over medium heat. Add garlic, onion and chiles and saute for 5 minutes. Add chile mixture to the pot of beans. Add chicken and the rest of the ingredients. Lower heat to medium and cook for approximately 1½ hours, stirring occasionally. Serve with shredded cheese and sour cream if desired.
