WHOLE WHEAT OATMEAL CAKE
 
INGREDIENTS:



Cake:

1 1/4 cup boiling water

1/4 cup margarine or butter

1 cup THRIVE Quick Oats

1 cup THRIVE Brown Sugar

1 cup THRIVE Sugar

2 eggs (using THRIVE Whole Eggs

1 1/3 cup THRIVE Whole Wheat Flour

1tsp. THRIVE Baking Soda

1 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. THRIVE Salt



Topping:

1 cup chopped nuts

1 cup coconut

1/2 cup THRIVE Sugar

1 teaspoon vanilla

1/4 cup margarine or butter

1/4 cup canned milk

PREPARATION:

Mix water, butter, and oatmeal together and set aside. In a separate bowl, cream together brown sugar, sugar, and eggs. Add oatmeal and creamed mixtures together and mix. Then add whole wheat flour, baking soda, cinnamon, nutmeg, and salt. Mix all ingredients well and place in a 9x13 pan. Bake at 350 for 35 minutes. While cake is baking, make the topping. Combine all topping ingredients and mix well. Spread the topping mixture over the baked cake. Turn oven to broil and place cake back in oven for 2-5 minutes or until the top of the cake is light brown.
